Yacon Syrup Extract
Yacon is a large perennial plant that is mainly grown and cultivated for its tuberous roots. It is a South American vegetable that looks like a sweet potato and tastes somewhat like a pear. Yacon syrup is extracted from the yacon plant roots and is commonly used as a natural sweetner that tastes something like molasses. It is a preferred natural sugar because it is about 50% Fructooligosacharides (FOS), which does not increase blood glucose levels.
